How to Make Oven Roasted Mussels

  1. Preheat oven to 450°F (232°C).
  2. Position one rack in the bottom third of the oven and another rack in the top third.
  3. In a small bowl, whisk together 2 cloves minced garlic, 1/4 cup chopped fresh parsley, 2 tablespoons chopped fresh chives (reserve 1 tablespoon for garnish), 1/4 cup dry white wine, 2 tablespoons olive oil, 1 tablespoon lemon juice, and 1/4 teaspoon red pepper flakes.
  4. Season the mixture generously with salt and freshly ground black pepper.
  5. Brush two slices of your favorite bread (about 1 inch thick) on both sides with 1 tablespoon olive oil.
  6. Place the bread on the top oven rack.
  7. Place 2 pounds of fresh mussels in a wide, oven-safe pot or skillet.
  8. Pour the garlic-herb mixture over the mussels.
  9. Cover the pot and place it on the bottom oven rack.
  10. Roast for 5-9 minutes, or until the mussels open. Discard any mussels that do not open.
  11. Meanwhile, watch the bread and remove it when lightly toasted.
  12. In a small bowl, melt 4 tablespoons of butter. Stir in 1 tablespoon of the reserved chopped chives.
  13. Add the herb butter to the cooked mussels and stir gently to combine and melt the butter.
  14. Divide the mussels and their juices among bowls. Sprinkle with the remaining chopped chives.
  15. Serve immediately with the toasted bread for dipping.
