How to Make Pacific Rim Salmon

  1. In a small bowl, whisk together 1/4 cup pineapple juice, 2 tablespoons soy sauce, 1 tablespoon prepared horseradish, 2 tablespoons chopped fresh parsley, 3 teaspoons sesame oil, 1 tablespoon honey, and 1/4 teaspoon black pepper.
  2. Pour 2/3 of the marinade into a large resealable bag.
  3. Add 1.5 lbs salmon fillet (skin on or off) and 2 green onions, thinly sliced, to the bag.
  4. Seal the bag and gently turn to coat the salmon completely.
  5. Refrigerate for 1 to 1 1/2 hours, turning the bag occasionally.
  6. In a small bowl, whisk together the remaining 1/3 of the marinade and 1 tablespoon sesame oil.
  7. Set aside for basting.
  8. Preheat grill to medium heat or preheat broiler.
  9. Lightly oil the grill grates or a baking sheet for broiling.
  10. Remove salmon from marinade, reserving the marinade. Discard used marinade.
  11. Place salmon on prepared grill or baking sheet.
  12. Grill, covered, for 8-12 minutes or broil 4-6 inches from the heat, or until the salmon flakes easily with a fork, basting frequently with the reserved marinade.
