How to Make Peppered Prawn With Leek
- Halve 2 leeks lengthwise and slice into 3cm pieces.
- Bring a pot of salted water to a boil. Add the leeks and cook until tender-crisp (about 5 minutes). Drain well and set aside.
- Gently rinse 250g shell-on prawns. Cut along the back of each prawn to remove the vein. Flatten the prawns slightly using the back of a knife.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add 2 cloves of minced garlic and stir-fry for 30 seconds until fragrant.
- Add the prawns to the wok and stir-fry for 2 minutes until they turn pink and opaque.
- In a small bowl, whisk together 2 tablespoons of fish sauce, 1 tablespoon of soy sauce, 1 tablespoon of brown sugar, 1 tablespoon of lime juice, and 1 teaspoon of freshly cracked black peppercorns.
- Pour the sauce over the prawns and stir-fry for another 2-3 minutes until the sauce thickens and coats the prawns evenly.
- Serve the prawns over the cooked leeks. Drizzle with any remaining sauce and garnish with fresh coriander leaves (about 2 tablespoons, chopped).
