How to Make Peppered Prawn With Leek

  1. Halve 2 leeks lengthwise and slice into 3cm pieces.
  2. Bring a pot of salted water to a boil. Add the leeks and cook until tender-crisp (about 5 minutes). Drain well and set aside.
  3. Gently rinse 250g shell-on prawns. Cut along the back of each prawn to remove the vein. Flatten the prawns slightly using the back of a knife.
