How to Make Pick Me Up Party Chicken Kabobs
- In a large non-reactive bowl, whisk together the marinade: 1/4 cup olive oil, 2 tablespoons lime juice, 1 tablespoon soy sauce, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon garlic powder, salt and pepper to taste.
- Add 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes, to the bowl. Toss to coat evenly.
- Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the chicken to fully marinate.
- Thread the marinated chicken onto skewers, alternating with cherry tomatoes (1 pint), bell peppers (1 cup, chopped), and red onion (1/2 cup, chopped).
- Preheat your grill to medium-high heat. Grill the kabobs for 5-7 minutes per side, or until the chicken is cooked through and the vegetables are tender.
- Remove from grill and let rest for a few minutes before serving warm. Garnish with fresh cilantro or parsley, if desired.
