How to Make Pick Me Up Party Chicken Kabobs

  1. In a large non-reactive bowl, whisk together the marinade: 1/4 cup olive oil, 2 tablespoons lime juice, 1 tablespoon soy sauce, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon garlic powder, salt and pepper to taste.
  2. Add 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes, to the bowl. Toss to coat evenly.
  3. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the chicken to fully marinate.
  4. Thread the marinated chicken onto skewers, alternating with cherry tomatoes (1 pint), bell peppers (1 cup, chopped), and red onion (1/2 cup, chopped).
