How to Make Salmon With Bow Tie Pasta Lemon And Onion

  1. In a small bowl, combine 1/2 cup sour cream, 2 tablespoons lemon juice, and 2 tablespoons chopped fresh parsley. Stir well and divide into two portions. Set aside.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add 1 medium yellow onion, thinly sliced, and sauté until tender, about 5 minutes.
  3. Spread the onions evenly across the bottom of the skillet.
  4. Place the 4 salmon fillets on top of the onions in a single layer. Sprinkle with 1 tablespoon of Creole seasoning and top each fillet with a lemon slice.
  5. Cover the skillet and simmer over low heat for 10 minutes, or until the salmon is cooked through.
  6. Meanwhile, cook the bow tie pasta according to package directions. Drain and toss with 2 tablespoons olive oil, one portion of the sour cream mixture, 1 teaspoon Creole seasoning, and 2 tablespoons chopped green onions.
  7. To plate, place the pasta on the bottom of each plate. Top with a salmon fillet, along with some of the cooked onions and lemon slices.
  8. Drizzle the remaining sour cream mixture over the salmon.
  9. Garnish with fresh parsley and serve immediately.
