How to Make Savoury Baked Eggs

  1. Preheat oven to 325°F (160°C).
  2. Peel and boil 1 lb potatoes in salted boiling water for 15-20 minutes, or until tender.
  3. Drain potatoes and mash with 4 tablespoons milk, 1/2 teaspoon salt, 1 teaspoon paprika, a dash of Tabasco sauce, and 1/4 teaspoon nutmeg.
  4. Set mashed potatoes aside.
  5. Hard-boil 6 large eggs. Once cooked, immediately transfer to an ice bath to cool.
  6. Once cool, peel, halve, and set aside.
  7. Melt 2 tablespoons butter in an oven-safe skillet. Sauté 1/2 medium onion (chopped) and 4 oz pork (diced) until pork is browned.
