How to Make Savoury Baked Eggs
- Preheat oven to 325°F (160°C).
- Peel and boil 1 lb potatoes in salted boiling water for 15-20 minutes, or until tender.
- Drain potatoes and mash with 4 tablespoons milk, 1/2 teaspoon salt, 1 teaspoon paprika, a dash of Tabasco sauce, and 1/4 teaspoon nutmeg.
- Set mashed potatoes aside.
- Hard-boil 6 large eggs. Once cooked, immediately transfer to an ice bath to cool.
- Once cool, peel, halve, and set aside.
- Melt 2 tablespoons butter in an oven-safe skillet. Sauté 1/2 medium onion (chopped) and 4 oz pork (diced) until pork is browned.
- Sprinkle with 2 tablespoons flour, stir well, and cook for 3 minutes.
- Spread the mashed potato mixture in a 10-inch round, greased ovenproof dish.
- Top with the pork mixture and layer 1/2 cucumber (thinly sliced) over the pork.
- Arrange 6 tomato halves (halved cherry or grape tomatoes work well) around the edge of the dish.
- Place 2 egg halves in front of each tomato half.
- In a bowl, whisk together the remaining 4 large eggs, 2 tablespoons milk, 1/4 teaspoon salt, 1 tablespoon chopped fresh parsley, and a pinch of black pepper.
- Pour the egg mixture evenly over the dish.
- Bake for 40 minutes, or until a knife inserted into the center comes out clean.
- Let stand for a few minutes to set before slicing into 6 wedges and serving.
