How to Make Simple Thai Style Lemongrass Shrimp Soup

  1. Cut off the dry end and a few top leaves of 1 stalk lemongrass. Bruise the stem with the handle of a knife and cut into 1-inch long pieces. Set aside.
  2. Bruise 2-3 Thai chilies, cut them in half, and remove the seeds. Set aside.
  3. Bring 4 cups of water to a boil in a medium saucepan.
  4. Add the lemongrass and 1 tablespoon of grated fresh ginger. Squeeze the juice of ½ a lime into the water.
  5. Boil for 2-3 minutes.
  6. Stir in 2 tablespoons of fish sauce and 1 teaspoon of chili-garlic paste.
  7. Cook for 1 minute.
  8. Add 1 (14.5 ounce) can of diced tomatoes, undrained, and 1 cup of sliced mushrooms.
  9. Cook for 2-3 minutes.
  10. Squeeze the juice of the remaining ½ lime into the soup.
  11. Remove from heat.
  12. Add the prepared chilies and let stand for a few seconds. Add 1 pound of peeled and deveined shrimp.
  13. Garnish with 2 tablespoons of chopped fresh cilantro and serve immediately.
