How to Make Slow Cooker Orange Beef

  1. In a large zip-top bag, combine 1.5 lbs beef sirloin (thinly sliced), 1/2 cup soy sauce, 1/4 cup honey, 1/4 cup orange juice, and 2 tablespoons grated fresh ginger.
  2. Seal the bag, pressing out excess air, and refrigerate for at least 4 hours, or preferably overnight, to marinate.
  3. Transfer the marinated beef and marinade to a 4-quart slow cooker.
  4. Add 1 bell pepper (sliced), 1 medium onion (sliced), and 1 bunch bok choy (roughly chopped) to the slow cooker.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the beef is incredibly tender and easily shreds with a fork.
  6. Serve immediately over steamed rice. Garnish with sesame seeds (optional) and extra chopped green onions (optional).
