How to Make Smoky Fried Rice

  1. Thaw frozen peas and carrots and drain.
  2. Chop 1/2 cup white onion.
  3. Thinly slice 4 green onions. If using meat, toss 1 cup of cooked protein with 1 teaspoon soy sauce, a pinch of white pepper, and a dash of sesame oil. Set aside.
  4. In a small bowl, whisk together 2 eggs with 1/2 teaspoon sesame oil, 1/2 teaspoon soy sauce, and a pinch of white pepper. Set aside.
  5. Heat 1 tablespoon peanut oil in a wok or large skillet over medium-high heat. Swirl to coat.
  6. Add the chopped white onion and green onions; sauté for 1 minute, or until softened.
  7. Remove onions and set aside in a bowl.
  8. Add the remaining 1 tablespoon peanut oil to the wok.
  9. Add the beaten eggs. Scramble lightly and quickly until just set.
  10. Remove the cooked eggs and add them to the bowl with the cooked onions.
  11. Add 1 tablespoon bacon drippings to the wok.
  12. Add the cooked cold rice and stir-fry for 2 minutes.
  13. Add the thawed peas and carrots; stir to combine.
  14. Return the cooked onions and eggs to the wok.
  15. Stir in 1 teaspoon soy sauce and 1/2 teaspoon sesame oil; stir-fry for 1 minute.
  16. Season with salt and pepper to taste.
  17. Garnish with red pepper flakes, if desired.
  18. Serve immediately and enjoy!
