How to Make Special Fried Rice
- Rinse 1 cup of uncooked long-grain rice in two to three changes of warm water to remove excess starch. Drain well.
- In a saucepan, combine the rinsed rice, 1 tbsp vegetable oil, and 350 ml of water. Bring to a boil, stir once, then reduce heat to low, cover, and simmer for 12-15 minutes, or until nearly all the water is absorbed.
- Turn off the heat and let the rice sit, covered, for 10 minutes.
- Fluff the rice with a fork and set aside to cool.
- Heat the remaining 1 tbsp of oil in a wok or large skillet over medium-high heat. Add the minced garlic and sliced spring onions and stir-fry for 30 seconds until fragrant.
- Add the diced chicken, shrimp, and frozen peas. Stir-fry for 1-2 minutes.
- Add the cooked rice and stir-fry for another 2 minutes, breaking up any clumps.
- Pour in the beaten egg and stir-fry until just set.
- Stir in the sliced lettuce, soy sauce, sugar, salt, and black pepper.
- Transfer the fried rice to a warmed serving bowl.
