How to Make Sunshine Fish

  1. Preheat oven to 400°F (200°C).
  2. Cut two large sheets of aluminum foil (approximately 18 inches square).
  3. Spray each foil sheet lightly with non-stick cooking spray.
  4. Place two fish fillets on each foil sheet.
  5. Coat each fillet with 1/2 teaspoon of mayonnaise.
  6. Drizzle each fillet with 1/2 tablespoon of lemon juice and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
  7. Divide the sliced onions, tomatoes, and mushrooms evenly between the two foil sheets, layering them on top of the fish fillets.
  8. Bring the sides of the foil together to create a sealed packet, folding over the edges to prevent leakage.
  9. Place the foil packets on a baking sheet.
  10. Bake for 20 minutes in the preheated oven.
  11. Carefully open the foil packets (watch out for steam!).
  12. Place the baking sheet under the broiler for 1-2 minutes, or until the fish is lightly browned and the vegetables are tender.
  13. Remove from oven and let rest for a few minutes before serving. Check if the fish flakes easily with a fork to ensure it's cooked through.
