How to Make Tempeh And Wild Mushroom Fricassee

  1. Coat a medium pot with cooking spray and heat over medium-high heat.
  2. Add 14 oz (400g) cubed tempeh and sauté until golden brown, about 8 minutes, stirring occasionally.
  3. Add 1/2 cup dry white wine and 2 tablespoons soy sauce. Cook until the liquid is almost evaporated, about 2-3 minutes.
  4. Remove the tempeh from the pot and set aside.
  5. Add 2 cups sliced leeks and 8 oz (225g) mixed wild mushrooms to the pot. Add 1/4 cup chicken or vegetable broth if needed and sauté for 5 minutes. Stir in 2 tablespoons all-purpose flour and cook for 1 minute, stirring constantly.
  6. Create a bouquet garni by tying together 2 stalks celery leaves, 2 sprigs fresh thyme, and 1 tablespoon chopped fresh parsley with kitchen twine.
  7. Add the bouquet garni, 2 cloves minced garlic, and 1 1/2 cups chicken or vegetable broth to the pot.
  8. Stir well to combine.
  9. Cover and simmer for 15 minutes.
  10. Uncover and cook for another 5-7 minutes, or until the sauce has thickened to your desired consistency.
  11. Remove and discard the bouquet garni.
  12. Stir in 1 tablespoon lemon juice, salt, and pepper to taste.
  13. Sprinkle with 1 tablespoon chopped fresh parsley.
  14. Garnish with a lemon rind twist (optional).
