How to Make Tex Mex Haddock Or Cod From Microwave

  1. If frozen, thaw the haddock or cod fillets completely.
  2. Arrange the thinly sliced onion in a single layer in the bottom of an ungreased 12 x 7 1/2 x 2-inch microwave-safe baking dish.
  3. Add 2 tablespoons of water to the dish.
  4. Cover the dish with vented microwave-safe plastic wrap.
  5. Microwave on high power for 3-4 minutes, or until the onion is crisp-tender.
  6. Place the fish fillets on top of the onion slices. Cover and microwave on high for 4-5 minutes, or until the fish flakes easily with a fork. Give the dish a half turn after 3 minutes to ensure even cooking.
