How to Make The Best Bloody Mary

  1. In a large pot, combine 2 large chopped carrots, 2 chopped celery stalks, 1 chopped medium yellow onion, 4 minced garlic cloves, 2 bay leaves, and 1 teaspoon black peppercorns.
  2. Add enough water to just cover the vegetables.
  3. Bring the mixture to a boil over high heat.
  4. Reduce heat to medium and simmer uncovered for 50 minutes, or until vegetables are very soft.
  5. Remove and discard the bay leaves.
  6. Stir in 1 tablespoon coarse sea salt and 2 tablespoons fresh lemon juice.
  7. Let the mixture cool slightly.
  8. Working in batches, carefully puree the vegetable mixture in a blender until completely smooth.
  9. Add water, as needed, until you have exactly 8 cups of liquid.
  10. Cover and chill the mixture completely.
  11. In a mortar and pestle (or spice grinder), grind together 1 tablespoon celery seeds and 1 1/2 teaspoons coarse sea salt.
