  • ¾ cup packed light brown sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt

  • 1 cup raisins
  • 1 cup buttermilk
  • Corn Oil
  • 1 large egg
  • 1 teaspoon vanilla extract

How to Make To Your Health Muffins

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups.
  2. In a large bowl, whisk together 2 cups all-purpose flour, 1 cup bran, ¾ cup packed light brown sugar, 2 teaspoons baking soda, 1 teaspoon salt, 1 teaspoon ground cinnamon, 1 ½ cups grated carrots, and 1 cup raisins.
  3. In a separate bowl, whisk together 1 cup buttermilk, ½ cup vegetable oil, 1 large egg, and 1 teaspoon vanilla extract.
