- Add chopped onion, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper to potatoes; mix well.
- Heat 2 tablespoons of oil in a cast-iron skillet over medium-high heat until shimmering.
- Add potato mixture; spread into a thick cake. Reduce heat to medium, cover, and cook until golden brown and crispy on the bottom (about 6 minutes).
- Carefully transfer the hash browns to a plate using a wide spatula.
- Add remaining 2 tablespoons of oil to the skillet. Return hash browns, browned-side up. Cook uncovered until golden brown and crispy on the other side (about 6 minutes more).
- Transfer hash browns to a baking sheet; keep warm in the preheated oven.
- Season steaks generously with salt and pepper.
- Preheat broiler.
- Broil steaks for 2 minutes per side, or until desired doneness is reached.
- Remove steaks from broiler; tent with foil to rest.
- Wipe out the skillet. Return to medium heat; add butter. Melt until foamy.
- Crack eggs into the skillet, one at a time.
