How to Make A Diner Breakfast

  1. Preheat oven to 200°F (93°C) to keep hash browns warm later.
  2. Shred potatoes using a food processor, stand mixer with shredding attachment, or box grater. Squeeze out as much moisture as possible; place in a large bowl.
  3. Add chopped onion, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper to potatoes; mix well.
  4. Heat 2 tablespoons of oil in a cast-iron skillet over medium-high heat until shimmering.
  5. Add potato mixture; spread into a thick cake. Reduce heat to medium, cover, and cook until golden brown and crispy on the bottom (about 6 minutes).
  6. Carefully transfer the hash browns to a plate using a wide spatula.
  7. Add remaining 2 tablespoons of oil to the skillet. Return hash browns, browned-side up. Cook uncovered until golden brown and crispy on the other side (about 6 minutes more).
  8. Transfer hash browns to a baking sheet; keep warm in the preheated oven.
  9. Season steaks generously with salt and pepper.
  10. Preheat broiler.
  11. Broil steaks for 2 minutes per side, or until desired doneness is reached.
  12. Remove steaks from broiler; tent with foil to rest.
