  • 3 ripe bananas, mashed
  • 1 tablespoon lemon juice
  • 250g cake flour
  • 5g baking powder
  • 2g salt
  • 200g granulated sugar
  • Peanuts

How to Make A Winning Banana Nut Bread

  1. Preheat oven to 180°C (350°F). Grease and flour a 23x13x7 cm loaf tin.
  2. Peel and mash 3 ripe bananas. Mix in 1 tablespoon of lemon juice.
  3. In a large bowl, sift together 250g cake flour, 5g baking powder, and 2g salt.
  4. Add 200g granulated sugar and 100g chopped walnuts (or pecans). Mix well.
  5. In a separate bowl, beat 2 large egg yolks. Add to the flour mixture along with 100g softened butter or margarine. Mix until just combined.
  6. Gently fold in the mashed banana mixture and 1 teaspoon of lemon zest.
  7. In a clean bowl, beat 2 large egg whites until stiff peaks form. Gently fold into the batter using a metal spoon.
  8. Pour batter into the prepared loaf tin. Level the top and sprinkle with extra chopped nuts, if desired.
  9. Bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
