  • All Bran Cereal
  • Skim Milk
  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon

  • 1 egg white
  • ½ cup raisins

How to Make All Bran Muffins

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine 1 cup All Bran cereal and ½ cup milk. Let stand for 15 minutes to soften.
  3. In a separate large bowl, whisk together 1 ½ cups all-purpose flour, ½ cup sugar, 2 teaspoons baking powder, and 1 teaspoon ground cinnamon.
  4. Add 1 egg white and ¼ cup unsweetened applesauce to the softened cereal mixture. Stir well to combine.
  5. Gently stir the wet ingredients (cereal mixture) into the dry ingredients (flour mixture) until just moistened. Do not overmix.
  6. Add a splash of milk (1-2 tablespoons) if the batter is too dry.
  7. Fold in ½ cup raisins.
  8. Generously spray a 12-cup muffin tin with non-stick cooking spray. Do not use paper liners.
  9. Divide the batter evenly among the muffin cups.
