How to Make Almond Banana Bars
- Preheat oven to 350°F (175°C).
- Spread 1 cup of sliced almonds on a baking sheet. Toast in the preheated oven for 10-15 minutes, or until lightly golden brown. Remove from oven and let cool completely.
- In a large bowl, whisk together 1 ½ cups all-purpose flour, ½ cup whole wheat flour, ¼ cup wheat germ, 1 cup granulated sugar, 2 teaspoons baking powder, ½ teaspoon salt, 1 teaspoon ground ginger, and ½ teaspoon ground cinnamon.
- In a separate bowl, whisk together 1 cup buttermilk, ½ cup vegetable oil, 3 ripe mashed bananas (about 1 ½ cups), and 2 large eggs.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the toasted almonds.
- Grease and flour a 9x9 inch baking pan. Pour the batter into the prepared pan and spread evenly.
- Bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bars cool completely in the pan before glazing.
- Once cooled, spread your favorite almond glaze (recipe not included, but a simple powdered sugar glaze works well) over the bars.
- Cut into bars and enjoy!
Chef's Tip for Extra Flavor
Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
