  • 1 lb egg noodles

How to Make Alpine Beef Goulash With Noodles

  1. In a large pot or Dutch oven, brown 2 lbs beef stew meat in 2 tablespoons of olive oil over medium-high heat. Remove beef and set aside.
  2. Add 1 large onion, chopped, and 4 cloves garlic, minced, to the pot. Sauté until softened, about 5 minutes.
  3. Stir in 28 oz can crushed tomatoes, 1 (15 oz) can tomato sauce, 2 tablespoons paprika, 1 tablespoon sweet Hungarian paprika (optional), 1 teaspoon caraway seeds, 1 teaspoon marjoram, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  4. Return the beef to the pot. Add 2 cups beef broth. Bring to a simmer, then reduce heat to low, cover, and cook for 2 1/2 hours, or until beef is very tender.
  5. Stir in 1/2 cup sour cream just before serving. Do not boil.
