How to Make Anzac Cookies Vegan

  1. Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together 2 cups all-purpose flour, 1 ½ cups rolled oats, ¾ cup granulated sugar, 1 cup desiccated coconut, ½ teaspoon salt, and ½ teaspoon ground allspice.
  3. In a medium saucepan, combine ½ cup vegan butter (cubed) and ¼ cup golden syrup over low heat. Stir until the butter is melted and the mixture is smooth.
  4. Remove from heat and stir in 1 teaspoon baking soda dissolved in 1 tablespoon boiling water. The mixture will foam – that's expected!
  5. Pour the wet ingredients into the dry ingredients and stir with a wooden spoon until just combined. Do not overmix.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  7. Gently flatten each cookie with your finger.
  8. Bake for 18-20 minutes, or until the edges are golden brown.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
