  • 2% Low Fat Milk
  • Butter
  • 1 medium apple (about 1 cup, shredded)

How to Make Apple And Flax Pancakes

  1. In a large bowl, whisk together 2 cups all-purpose flour, 1/4 cup ground flaxseed meal, 1/2 cup granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg.
  2. In a medium bowl, lightly whisk together 2 large egg yolks, 1 cup milk, and 1/4 cup melted unsalted butter.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  4. Shred 1 medium apple (about 1 cup) and gently fold it into the batter.
