How to Make Apple Friendship Bread
- Preheat oven to 350°F (175°C).
- In a large bowl, combine: 2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, 1/2 teaspoon salt.
- Add: 1 cup granulated sugar, 1/2 cup vegetable oil, 2 large eggs, 1 teaspoon vanilla extract, 1 cup milk, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg.
- Gently fold in: 2 medium apples (peeled, cored, and diced), 1 cup chopped nuts (walnuts or pecans recommended).
- Grease and flour two 9x5 inch loaf pans, or spray with baking spray.
- In a small bowl, mix 1/2 cup granulated sugar with 1 1/2 teaspoons ground cinnamon.
- Sprinkle half of the cinnamon-sugar mixture evenly into each prepared loaf pan, coating the bottom and sides.
- Pour batter evenly into the prepared pans.
- Sprinkle the remaining cinnamon-sugar mixture over the top of the batter.
- Bake for 60-75 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pans for 10 minutes before inverting onto a wire rack to cool completely.
