Ingredients for Apple Sauce Banana And Raisin Bread Pudding
- 4 cups cubed stale bread (challah or brioche recommended)
- Granny Smith Apple
- 4 tablespoons (1/2 stick) unsalted butter, divided
- 1/2 cup raisins
- 2 ripe bananas, sliced
- Half And Half Milk
- 1/4 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon, divided
- 2 tablespoons honey
- White Sugar
- Unbleached Cane Sugar
- 1 teaspoon vanilla extract
- 2 large eggs
How to Make Apple Sauce Banana And Raisin Bread Pudding
- Preheat oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a small saucepan over medium heat. Add the chopped apple, honey, cane sugar, and 1/2 teaspoon of cinnamon.
- Stir to combine and cook until the apples are softened, about 5-7 minutes.
- Stir in the raisins.
- In a separate bowl, whisk together the eggs, milk, vanilla extract, nutmeg, and remaining 1/2 teaspoon of cinnamon until light and frothy.
- Grease a small oven-safe bowl (approximately 1.5-quart capacity) with the remaining 2 tablespoons of butter.
- Layer half of the applesauce in the bottom of the prepared bowl, followed by half of the sliced bananas, and then half of the cubed bread.
- Repeat the layers: remaining applesauce, remaining bananas, and remaining bread.
- Pour the egg mixture evenly over the bread layers.
- Place the bowl in a larger baking dish. Pour enough hot water into the larger dish to come halfway up the sides of the smaller bowl (this creates a bain-marie for even baking).
- Bake in the preheated oven for 45 minutes, or until the pudding is set and golden brown.
- Let cool slightly before serving warm or cold. Top with vanilla ice cream or whipped cream, if desired.
Chef's Tip for Extra Flavor
Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
