How to Make Applesauce Cinnamon Rolls

  1. Whisk together 1 cup all-purpose flour, 1/2 cup granulated sugar, 2 teaspoons baking powder, 1 teaspoon baking soda, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon salt in a large bowl.
  2. In a separate saucepan, heat 1 cup milk, 1/2 cup (1 stick) unsalted butter, 2 tablespoons granulated sugar, 1/4 teaspoon salt, and 3/4 cup applesauce over medium heat until butter is melted and mixture is warm. Whisk in 1 large egg.
  3. Add the wet ingredients to the dry ingredients and stir until just combined. Turn the dough out onto a lightly floured surface and knead for 3-5 minutes until smooth. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  4. Punch down the dough and roll it out into a 12x12 inch square on a lightly floured surface.
  5. Spread 1/4 cup applesauce evenly over the dough. In a small bowl, combine 1/3 cup granulated sugar and 1 tablespoon ground cinnamon. Sprinkle the cinnamon-sugar mixture evenly over the applesauce.
  6. Starting from the long side, tightly roll up the dough into a log. Cut the log into 12 even slices using a sharp knife or pizza cutter.
  7. Arrange the rolls in two greased 8x8 inch baking pans. Cover loosely with plastic wrap and let rise for another 30-45 minutes, or until almost doubled in size.
  8. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown. Let cool in the pans for a few minutes before serving.
  9. While the rolls are baking, prepare the icing (recipe below).
