- 4 tablespoons (1/2 stick) unsalted butter
- All Purpose Flour
- 2 cups whole milk
- 1 tablespoon your favorite hot sauce (adjust to taste)
- 1/2 cup grated Parmesan cheese
- 4 large egg yolks
- 1/2 cup shredded American cheese
- 1 cup shredded Colby cheese

- 1 cup cooked and sliced ham

- 6 slices cooked bacon, crumbled
- 1 teaspoon paprika
How to Make Arkansas Hot Browns
- Preheat oven to 400°F (200°C).
- In a heavy 4-quart saucepan, melt butter over medium heat. Whisk in flour until smooth.
- Gradually whisk in milk, stirring constantly until the sauce thickens.
- Remove from heat and stir in hot sauce and Parmesan cheese.
- Pour 1/2 cup of the sauce into a small bowl. Set aside.
- In a separate bowl, whisk together the egg yolks and the reserved 1/2 cup of sauce until light and frothy.
- Slowly pour the egg yolk mixture into the remaining sauce in the saucepan, whisking constantly.
- Return the saucepan to low heat and cook, stirring constantly, until the sauce thickens slightly (do not boil).
- Remove from heat and stir in Colby and American cheeses until melted and smooth.
- Place bread slices on individual oven-safe plates.
- Top each bread slice with chicken or turkey, and ham.
- Spoon the cheese sauce generously over the meat.
- Top each serving with a tomato slice and crumbled bacon.
- Sprinkle with paprika.
- Bake for 10-15 minutes, or until bubbly and heated through.
