How to Make Arroz Brasileiro Brazilian Rice
- Heat 1 tablespoon of olive oil in a medium saucepan over medium heat.
- Add 1/2 cup of chopped onions and sauté until translucent, about 5 minutes.
- Add 1 cup of long-grain rice and cook, stirring constantly, for 2-3 minutes, until the grains are coated with oil and lightly toasted.
- Pour in 2 cups of hot chicken or vegetable broth, 1 (14.5 ounce) can of diced tomatoes (undrained), and 1 teaspoon of salt. Bring to a boil.
- Reduce heat to low, cover the saucepan tightly, and simmer for 20 minutes, or until all the liquid is absorbed and the rice is tender.
- Remove from heat and let stand, covered, for 5 minutes.
- Fluff with a fork and garnish generously with fresh chopped cilantro and diced tomatoes before serving.
