- Marinated Artichoke Hearts
- 1 medium onion, finely chopped
- Garlic Clove
- 2 large eggs, lightly beaten
- Fine Breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- Hot Pepper Sauce
- Sharp Cheddar Cheese
- Fresh Parsley
How to Make Artichoke Nibbles
- Preheat oven to 325°F (160°C).
- Drain one jar of artichoke hearts; reserve the marinade for another use (or discard). Drain the second jar and discard the marinade.
- Finely chop both jars of artichoke hearts and set aside.
- Heat olive oil in a medium skillet over medium heat. Add the chopped onion and garlic and sauté until the onion is softened, about 5 minutes.
- In a large bowl, whisk together the eggs, breadcrumbs, salt, pepper, oregano, and hot sauce.
- Stir in the Parmesan cheese and parsley.
- Add the chopped artichokes and the sautéed onion mixture to the bowl. Gently fold everything together until well combined.
- Grease a 9x9 inch baking dish.
- Pour the artichoke mixture into the prepared baking dish.
- Bake for 30 minutes, or until golden brown and set.
- Let cool slightly before cutting into 1-inch squares.
- Serve warm or at room temperature. These can be prepared a day or two ahead and reheated for 10-12 minutes in a preheated oven at 350°F (175°C).
