Ingredients for Artichoke Nibbles

  • Marinated Artichoke Hearts
  • 1 medium onion, finely chopped
  • Garlic Clove
  • 2 large eggs, lightly beaten
  • Fine Breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • Hot Pepper Sauce
  • Sharp Cheddar Cheese
  • Fresh Parsley

How to Make Artichoke Nibbles

  1. Preheat oven to 325°F (160°C).
  2. Drain one jar of artichoke hearts; reserve the marinade for another use (or discard). Drain the second jar and discard the marinade.
  3. Finely chop both jars of artichoke hearts and set aside.
  4. Heat olive oil in a medium skillet over medium heat. Add the chopped onion and garlic and sauté until the onion is softened, about 5 minutes.
  5. In a large bowl, whisk together the eggs, breadcrumbs, salt, pepper, oregano, and hot sauce.
  6. Stir in the Parmesan cheese and parsley.
  7. Add the chopped artichokes and the sautéed onion mixture to the bowl. Gently fold everything together until well combined.
  8. Grease a 9x9 inch baking dish.
  9. Pour the artichoke mixture into the prepared baking dish.
  10. Bake for 30 minutes, or until golden brown and set.
  11. Let cool slightly before cutting into 1-inch squares.
  12. Serve warm or at room temperature. These can be prepared a day or two ahead and reheated for 10-12 minutes in a preheated oven at 350°F (175°C).
