  1. Cook 1 pound Italian sausage links until browned; set aside. Slice into 1/2-inch pieces.
  2. Heat 2 tablespoons olive oil in each of two large skillets over medium heat.
  3. Add 1/2 of the following to each skillet: 1 large onion (chopped), 2 cloves garlic (minced), 1 red bell pepper (chopped), 1 green bell pepper (chopped).

  6. Add 1 medium eggplant (cubed) to the remaining skillet and stir-fry for 3 minutes.
