- Italian Sausages

How to Make Aunt Aileen S Ratatouille
- Cook 1 pound Italian sausage links until browned; set aside. Slice into 1/2-inch pieces.
- Heat 2 tablespoons olive oil in each of two large skillets over medium heat.
- Add 1/2 of the following to each skillet: 1 large onion (chopped), 2 cloves garlic (minced), 1 red bell pepper (chopped), 1 green bell pepper (chopped).
- Stir-fry vegetables for 2-3 minutes until slightly softened.
- Remove one skillet from heat.
- Add 1 medium eggplant (cubed) to the remaining skillet and stir-fry for 3 minutes.
- Return the second skillet to medium heat.
- Add 2 medium zucchini (sliced) and stir-fry for 1 minute.
- Season the contents of both skillets with 1 bay leaf, 1 tablespoon chopped fresh parsley, 1 tablespoon chopped fresh basil, 1 teaspoon dried thyme, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper.
- Add half of the sliced sausage and 1 (28-ounce) can of diced tomatoes (undrained) to each skillet.
- Spoon the contents of both skillets into either one large (9x13 inch) oven-safe dish or individual oven-safe ramekins.
- Top with 1 cup shredded mozzarella cheese.
- Bake in a preheated 350°F (175°C) oven for 15-20 minutes, or until the cheese is melted, bubbly, and golden brown.
- Serve immediately with crusty French bread. Enjoy!
