  • 2 ripe avocados
  • Flour Tortillas
  • Green Chilies
  • Monterey Jack Cheese
  • Melted butter, for brushing
  • Onions
  • 4 slices cooked and crumbled bacon
  • Garlic Powder
  • Salt

How to Make Avocado Wedges

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, mash 2 ripe avocados with 1/4 cup finely chopped red onion, 1/4 cup crumbled cotija cheese (or your favorite cheese), and 2 tablespoons chopped pickled jalapeños (or other chiles).
  3. Gently stir in 4 slices cooked and crumbled bacon. Add a pinch of crushed red pepper flakes for extra heat (optional).
  4. Warm 4 large flour tortillas (6-inch diameter) according to package directions.
  5. Divide the avocado mixture evenly among the tortillas, spreading it within 1/4 inch of the edges.
  6. Fold each tortilla in half and crimp the edges to seal.
  7. Brush both sides of the folded tortillas with melted butter.
  8. Bake for 10-12 minutes, or until golden brown and the cheese is melted and bubbly.
