- 2 ripe avocados
- Flour Tortillas
- Green Chilies
- Monterey Jack Cheese

How to Make Avocado Wedges
- Preheat oven to 350°F (175°C).
- In a medium bowl, mash 2 ripe avocados with 1/4 cup finely chopped red onion, 1/4 cup crumbled cotija cheese (or your favorite cheese), and 2 tablespoons chopped pickled jalapeños (or other chiles).
- Gently stir in 4 slices cooked and crumbled bacon. Add a pinch of crushed red pepper flakes for extra heat (optional).
- Warm 4 large flour tortillas (6-inch diameter) according to package directions.
- Divide the avocado mixture evenly among the tortillas, spreading it within 1/4 inch of the edges.
- Fold each tortilla in half and crimp the edges to seal.
- Brush both sides of the folded tortillas with melted butter.
- Bake for 10-12 minutes, or until golden brown and the cheese is melted and bubbly.
- Cut each tortilla in half, then cut each half into two wedges for a total of 8 wedges per tortilla. Serve immediately and enjoy!
