Ingredients for Awesome Enchiladas

  • 1/4 cup (57g) butter
  • 2 tablespoons chili powder
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • Garlic Cloves
  • 2 cups water
  • 1 (15-ounce) can tomato paste
  • 1 lb ground beef (or 1.5 lbs shredded chicken)
  • 1 packet taco seasoning
  • 1 medium onion, chopped
  • Cheddar Cheese
  • Flour Tortillas

How to Make Awesome Enchiladas

  1. Preheat oven to 375°F (190°C).
  2. **Make the sauce:** Melt 1/4 cup (57g) butter in a medium saucepan over medium heat. Whisk in 2 tablespoons chili powder, 2 tablespoons all-purpose flour, and 1 teaspoon salt until smooth.
  3. Gradually whisk in 2 cups water and 1 (15-ounce) can tomato paste.
  4. Bring to a simmer, stirring frequently, until the sauce has thickened (about 8-10 minutes).
  5. **Make the filling:** Brown 1 lb ground beef (or 1.5 lbs shredded chicken) with 1 medium onion, chopped, in a large skillet over medium-high heat. Drain off any excess grease.
  6. Stir in 1 packet taco seasoning.
  7. Add 1/2 cup of the prepared enchilada sauce to the meat and mix well.
  8. Fill each tortilla (12 corn or flour tortillas) with about 1/4 cup of the beef mixture and 1 tablespoon shredded cheddar cheese.
  9. Roll up tightly and place seam-down in a lightly greased 9x13 inch baking dish.
  10. Pour the remaining enchilada sauce over the enchiladas.
  11. Bake for 25-30 minutes, or until bubbly and heated through.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
