  • Vidalia Onion
  • Sliced Almonds
  • Gorgonzola
  • Cider Vinegar
  • Extra Virgin Olive Oil
  • Dijon Mustard
  • 1 teaspoon sugar
  • 1 teaspoon dried tarragon
  • Salt to taste
  • Fresh Ground Black Pepper

How to Make Baby Blue Spinach Salad

  1. Wash and thoroughly dry 5 oz of baby spinach.
  2. In a large bowl, combine the spinach, 1/2 cup blueberries, 1/4 cup thinly sliced red onion, and 1/4 cup slivered almonds.
  3. Crumble 4 oz of gorgonzola cheese over the salad.
  4. In a small bowl, whisk together 2 tablespoons red wine vinegar, 4 tablespoons olive oil, 1 teaspoon Dijon mustard, 1 teaspoon sugar, 1 teaspoon dried tarragon, and salt and freshly ground black pepper to taste.
