How to Make Babzy S Low Fat Chicken Cacciatore

  1. Cut 1.5 lbs boneless, skinless chicken breasts into 1-inch pieces. Lightly brown the chicken in a large skillet with 1 tbsp olive oil over medium-high heat. Set aside.
  2. Add 1 tbsp olive oil to the same skillet. Sauté 1 medium onion (chopped), 1 bell pepper (chopped), and 2 cloves garlic (minced) until softened, about 5-7 minutes.
  3. Transfer the sautéed vegetables to a large casserole dish. Add the browned chicken.
  4. In a medium bowl, whisk together 1 (28 ounce) can crushed tomatoes, 1 (15 ounce) can tomato sauce, 1 tsp dried oregano, 1 tsp dried basil, 1/2 tsp salt, 1/4 tsp black pepper, and 1/4 cup chopped fresh parsley. Pour the sauce over the chicken and vegetables.
  5. Cover the casserole dish with foil and bake at 375°F (190°C) for 1 hour.
  6. Serve hot over your choice of whole wheat pasta, brown rice, or couscous.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
