How to Make Baked Cheese Broccoli Patties
- Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and lightly grease it.
- Heat 1 tablespoon of olive oil in a small pan over medium heat. Add 2 cloves of minced garlic and 1/2 cup of chopped onion.
- Season with salt and pepper to taste. Sauté until the onions and garlic are tender, about 5 minutes. Set aside to cool.
- Steam or microwave 1 large head of broccoli until tender-crisp. Once cooled slightly, wrap the broccoli in a clean kitchen towel and squeeze out as much excess moisture as possible.
- In a large bowl, combine the squeezed broccoli, sautéed onion and garlic mixture, 1 cup panko breadcrumbs, 1 cup shredded cheddar cheese, 1/2 cup grated Parmesan cheese, 2 large eggs, and salt and pepper to taste.
- Mix gently until well combined. Form the mixture into 8-10 patties.
- Place the patties on the prepared baking sheet.
- Bake for 15 minutes.
- Flip the patties and bake for another 15-20 minutes, or until golden brown and crispy.
