How to Make Baked Cod With Vegetables Prosciutto And Pine Nuts

  1. Preheat oven to 220°C / 425°F.
  2. In a large roasting pan, toss together 1 cup green beans (trimmed), 1 red bell pepper (cored, seeded, and chopped), 1 cup cremini mushrooms (halved or quartered), and 2 cloves garlic (minced).
  3. Season generously with salt and freshly ground black pepper.
  4. Drizzle with 2 tablespoons olive oil and toss to coat vegetables evenly.
  5. Nestle 4 cod fillets (6-8 oz each) into the vegetables. Season cod with salt and pepper.
