How to Make Baked Curry Puffs

- Stir in 2 tablespoons curry powder, 1/2 cup water, 1 tablespoon sugar, 1 teaspoon salt, and 1/2 teaspoon black pepper. Simmer over medium-low heat, stirring occasionally, until potatoes are almost tender (about 10-15 minutes). Add more water if needed to maintain a saucy consistency.
- Add 1 cup mixed frozen vegetables (carrots, corn, parsnips, peas; thawed) and 1/4 cup chopped fresh coriander. Cook for 2-3 minutes until vegetables are slightly softened.
- Remove from heat and let the filling cool completely.
- Preheat oven to 185°C (365°F).
- Cut 1 package (14.1 oz) puff pastry into 4-inch by 4-inch squares.
