  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 spring onions, chopped
  • 2 cloves garlic, minced
  • Refined Flour
  • Mushroom
  • Ham
  • Black Pepper
  • Salt and pepper to taste
  • Fettuccine Pasta
  • Cheddar Cheese
  • Butter

How to Make Baked Pasta With White Mushroom Sauce

  1. Heat 2 tablespoons of olive oil in a large pan over medium heat. Add 1 medium onion, 2 spring onions (chopped), and 2 cloves garlic (minced) and sauté until softened, about 5 minutes.
  2. Sprinkle in 2 tablespoons of all-purpose flour and cook for 1 minute, stirring constantly. Gradually whisk in 2 cups of milk, then season with salt and pepper to taste.
  3. Add 8 ounces of sliced white mushrooms and cook until tender, about 5-7 minutes.
  4. Stir in 4 ounces of diced ham or Italian sausage (cooked and crumbled). Simmer for 2 minutes. Lightly brush a 9x13 inch baking dish with olive oil.
  5. Spread half of the mushroom sauce in the prepared baking dish. Top with half of the cooked ham or sausage.
  6. Layer 3 cups of cooked pasta (any short pasta shape works well) over the ham/sausage. Pour the remaining mushroom sauce over the pasta.
  7. Sprinkle 1 cup of shredded mozzarella cheese and 2 tablespoons of butter in small pieces over the top layer.
  8. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the cheese is golden brown and bubbly.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
