How to Make Baked Rice Pudding Unni Riisipuuro

  1. Cook 1 cup of rice according to package directions.
  2. Drain the cooked rice thoroughly and rinse under cold water until the water runs clear.
  3. In a large bowl, whisk together 4 cups of milk, 4 tablespoons of melted butter, ¾ cup of sugar, 4 large eggs, and a pinch of salt.
  4. Gently stir in the cooked rice and pour the mixture into a well-buttered 2-quart casserole dish.
  5. In a small bowl, combine ¼ cup of sliced almonds and 1 teaspoon of ground cinnamon. Sprinkle evenly over the pudding.
