How to Make Baked Rice Pudding Unni Riisipuuro
- Cook 1 cup of rice according to package directions.
- Drain the cooked rice thoroughly and rinse under cold water until the water runs clear.
- In a large bowl, whisk together 4 cups of milk, 4 tablespoons of melted butter, ¾ cup of sugar, 4 large eggs, and a pinch of salt.
- Gently stir in the cooked rice and pour the mixture into a well-buttered 2-quart casserole dish.
- In a small bowl, combine ¼ cup of sliced almonds and 1 teaspoon of ground cinnamon. Sprinkle evenly over the pudding.
- Bake in a preheated moderate oven (350°F or 175°C) for approximately 1 hour, or until the pudding is set and golden brown, and a knife inserted into the center comes out clean.
- Once the pudding is out of the oven, gently press a whole blanched almond into the pudding and cover the indentation with some of the pudding mixture.
