How to Make Banana Berry Bread

  1. Preheat oven to 350°F (175°C). Grease and flour two 9x5 inch loaf pans.
  2. In a large bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, 1/2 teaspoon salt, and 1 teaspoon ground cinnamon.
  3. In a separate bowl, mash 3 ripe bananas with a fork. Add 1/2 cup granulated sugar, 1/4 cup brown sugar, 1/2 cup melted unsalted margarine, 2 large eggs, and 1 teaspoon vanilla extract. Mix well.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. Gently fold in 1 cup mixed berries (blueberries, raspberries, strawberries - your choice!)
  6. Pour batter evenly into prepared loaf pans.
