How to Make Barbecued Lobster Tails
- Split the lobster tails lengthwise with a large knife, leaving the shells intact.
- In a medium bowl, whisk together the marinade ingredients: 1/4 cup melted butter, 2 tablespoons lemon juice, 1 tablespoon olive oil, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon cayenne pepper (optional), salt and pepper to taste.
- Brush the meat side of each lobster tail generously with the marinade.
- Preheat your grill to medium heat (approximately 350°F).
- Place the lobster tails meat-side down on the preheated grill. Cook for 5-6 minutes.
- Flip the lobster tails and cook for another 5-6 minutes, basting frequently with the remaining marinade. Cook time may vary depending on the size of the lobster tails.
- Remove the lobster tails from the grill. They are done when the meat is opaque and firm to the touch.
- Serve immediately with drawn butter (1/2 cup butter, 2 tablespoons lemon juice, melted together) and wedges of fresh lemon.
