- 2 medium cucumbers, thinly sliced

- Red Onion
- Currants
- Garlic Powder

- 1/2 cup water
- 1/2 cup cherry or grape tomatoes, halved (add just before serving)
How to Make Basil Cucumber Salad
- Thinly slice the cucumbers and red onion. Place them in a medium-sized bowl.
- Add the chopped basil to the bowl.
- In a small bowl, whisk together the rice vinegar and water.
- Pour the vinegar mixture over the cucumbers, onions, and basil.
- Sprinkle in the minced garlic.
- Gently toss to combine. Cover and refrigerate for at least 2 hours to allow the flavors to meld. (For best results, marinate overnight!)
- Just before serving, gently toss in the halved cherry or grape tomatoes.
