How to Make Basquadillas
- Preheat oven to 400°F (200°C).
- Roast red bell peppers: Halve the peppers, remove seeds and membranes, and place cut-side down on a baking sheet. Roast for 20-25 minutes, or until the skin is blackened and blistered.
- While peppers roast, prepare the goat cheese mixture: In a bowl, combine crumbled goat cheese, chopped fresh herbs (rosemary, thyme, and oregano work well), and a pinch of salt and pepper.
- Once the peppers are cool enough to handle, peel off the charred skin and roughly chop them.
- On a lightly floured surface, roll out pizza dough to 1/8 inch thickness. Transfer to a baking sheet.
- Spread the goat cheese mixture evenly over the pizza dough, leaving a small border.
- Top with the roasted red peppers.
- Bake for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
- Let cool slightly before slicing and serving. Enjoy!
