How to Make Beef And Guinness Pie

  1. Preheat oven to 325°F (160°C).
  2. In a large bowl, whisk together 2 tablespoons of tomato paste and 2 cups of beef stock until the paste is completely dissolved.
  3. Add 2 lbs beef stew meat, 8 oz cremini mushrooms (sliced), 1 large onion (chopped), 2 cloves garlic (minced), 1 teaspoon dried thyme, and 1 (12 oz) bottle of Guinness.
  4. Stir well to combine all ingredients.
  5. Sprinkle 2 tablespoons of all-purpose flour over the beef mixture. Season generously with salt and pepper to taste.
  6. Stir well to incorporate the flour.
  7. Transfer the beef mixture to a deep 10 1/2 x 12 1/2 inch ovenproof baking dish. Cover tightly with aluminum foil.
  8. Bake for 3 1/2 - 4 hours, stirring occasionally, until the beef is very tender.
  9. While the beef is baking, prepare the egg wash: In a small bowl, beat 1 large egg with 1 teaspoon of water.
  10. On a lightly floured surface, roll out 1 sheet (14.1 oz) of puff pastry to about 1/4 inch thick. Make it at least 2 inches larger than your baking dish.
  11. Remove the baking dish from the oven and carefully remove the foil.
  12. Drape the puff pastry over the beef mixture, tucking the edges down to seal.
  13. Brush the pastry with the egg wash.
  14. Return the dish to the oven and bake for 40 minutes, or until the pastry is puffed and golden brown.
