- 1/2 cup water or beef broth
How to Make Beef And Veggie Burrito Filling
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of ground beef and cook, breaking it up with a spoon, until browned (about 5-7 minutes).
- Drain off any excess grease.
- Add 1 medium onion, chopped, and 2 bell peppers (any color), chopped. Cook for 5 minutes, stirring occasionally, until softened.
- Stir in 1 (14.5 ounce) can of diced tomatoes, undrained, 1 teaspoon salt, 1/2 teaspoon sugar, 1 teaspoon chili powder, 1/2 teaspoon cumin, and 1/4 teaspoon black pepper.
- Stir well to combine all ingredients.
- Add 1/2 cup of water or beef broth to the skillet. Bring to a simmer, reduce heat to low, and cover. Simmer for 10-15 minutes, allowing the flavors to meld.
- Remove the lid and cook for another 5 minutes, or until most of the liquid has evaporated. Taste and adjust seasoning as needed.
- Serve immediately in warm tortillas with your favorite toppings such as shredded cheese, sour cream, guacamole, salsa, or lettuce.
