How to Make Beef Or Chicken Or Turkey Enchiladas

  1. Preheat oven to 350°F (175°C).
  2. In a medium saucepan, combine 1 (15 ounce) can diced tomatoes, 1 (10 ounce) can diced tomatoes and green chilies (Rotel), 1 cup chicken broth, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon oregano, and salt and pepper to taste. Bring to a simmer and cook for 20 minutes.
  3. While the sauce simmers, brown 1.5 lbs ground beef (or 1.5 lbs cooked and shredded chicken or turkey) and 1 medium onion, chopped, in a large skillet over medium-high heat. Drain excess fat.
  4. Remove the meat from the heat and stir in 1 cup shredded cheddar cheese, 1 cup of the simmered tomato mixture, and 1/2 cup chopped black olives.
  5. Pour the remaining tomato mixture into a greased 13x9 inch baking dish.
  6. Fill each tortilla (approximately 12 corn or flour tortillas) with about 2 heaping tablespoons of the meat mixture. Fold or roll the tortillas and place them seam-down in the baking dish.
  7. Pour any remaining meat and tomato mixture over the enchiladas.
  8. Sprinkle the top with the remaining shredded cheese (about 1/2 cup).
