How to Make Beef Tagine With Sweet Potatoes
- Heat 2 tablespoons of olive oil in a flameproof casserole dish over medium heat. Add 1.5 lbs beef stew meat, 1 teaspoon turmeric, 1 teaspoon salt, and 1/2 teaspoon black pepper. Brown the meat evenly, stirring frequently, for 3-4 minutes.
- Cover the pan tightly and cook for 15 minutes over low heat, without lifting the lid.
- Preheat oven to 350°F (175°C).
- Add 1 large onion (chopped), 1-2 serrano chilis (finely chopped, adjust to taste), 1 tablespoon paprika, 1/2 teaspoon cayenne pepper (optional), and 1 teaspoon ground cumin to the pan. Add just enough water to cover the meat.
- Cover tightly and braise in the oven for 1-1.5 hours, or until the meat is very tender. Check occasionally and add more water if necessary to keep the stew moist.
- Meanwhile, peel and thinly slice 2 large sweet potatoes. Immediately place the slices in a bowl of salted water to prevent discoloration.
- Transfer the sweet potato slices to a saucepan, bring to a boil, and simmer for 2-3 minutes. Drain well.
- Stir in 1/4 cup chopped fresh cilantro and 1/4 cup chopped fresh parsley into the meat. Add a little extra water if the stew seems dry.
- Arrange the sweet potato slices over the meat and dot with 2 tablespoons of butter.
- Cover and cook in the oven for a further 10 minutes, until the potatoes are very tender.
- Increase oven temperature to 400°F (200°C).
- Remove the lid and cook in the oven or under the broiler for 5-10 minutes, until the potatoes are golden brown.
- Serve immediately. Optional: Stir in 1 (15-ounce) can of chickpeas and 5 ounces of fresh spinach during the last 10 minutes of cooking.
