How to Make Beef Tagine With Sweet Potatoes

  1. Heat 2 tablespoons of olive oil in a flameproof casserole dish over medium heat. Add 1.5 lbs beef stew meat, 1 teaspoon turmeric, 1 teaspoon salt, and 1/2 teaspoon black pepper. Brown the meat evenly, stirring frequently, for 3-4 minutes.
  2. Cover the pan tightly and cook for 15 minutes over low heat, without lifting the lid.
  3. Preheat oven to 350°F (175°C).
  4. Add 1 large onion (chopped), 1-2 serrano chilis (finely chopped, adjust to taste), 1 tablespoon paprika, 1/2 teaspoon cayenne pepper (optional), and 1 teaspoon ground cumin to the pan. Add just enough water to cover the meat.
