How to Make Big Mac Meatloaf
- Preheat oven to 350°F (175°C).
- In a large bowl, combine 1.5 lbs ground beef, 1/2 cup finely chopped onion, 1/2 cup shredded cheddar cheese, 1/4 cup ketchup, 2 tablespoons yellow mustard, 1 tablespoon Worcestershire sauce, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon black pepper, and 1/4 cup bread crumbs.
- Mix thoroughly until all ingredients are evenly combined.
- Divide the meat mixture in half. Place one half onto a large sheet of wax paper.
- Spread the meat mixture into a roughly rectangular shape (about 1/2 inch thick).
- Sprinkle 1/4 cup of shredded cheddar cheese evenly over the meat.
- Tightly roll the meatloaf like a jelly roll, using the wax paper to help lift and shape it.
- Place the meatloaf seam-down in a greased 9x13 inch baking pan.
- Repeat steps 4-7 with the remaining meat mixture.
- For an optional crunchy topping: Crush 1/2 cup of saltine crackers. Mix with 2 tablespoons mayonnaise and 2 tablespoons shredded cheddar cheese.
- Spread the cracker mixture evenly over the meatloaves.
- Bake for 45-60 minutes, or until the internal temperature reaches 160°F (71°C).
- Let stand for 10 minutes before slicing and serving.
