How to Make Caramel Apple Cheesecake

  1. Preheat oven to 350°F (175°C).
  2. Combine 1 ½ cups graham cracker crumbs, ¼ cup sugar, 6 tablespoons melted butter, 1 teaspoon cinnamon, and a pinch of salt. Mix until well combined.
  3. Press mixture firmly into the bottom of a lightly greased 9-inch springform pan.
  4. Bake for 10 minutes. Remove and let cool completely.
  5. In a large bowl, beat 3 (8 ounce) packages cream cheese and 1 ½ cups sugar until smooth and creamy.
  6. Beat in 4 large eggs one at a time, mixing on low speed until just combined.
  7. Stir in 2 teaspoons vanilla extract.
  8. In a separate bowl, toss 3 medium apples (peeled, cored, and thinly sliced) with 2 tablespoons lemon juice, ¼ cup sugar, and 1 teaspoon cinnamon.
  9. Pour the cream cheese mixture over the cooled crust.
  10. Spoon the apple mixture evenly over the cheesecake filling.
  11. Place the springform pan into a larger roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan.
  12. Bake for 55-60 minutes, or until the center is almost set. The edges will be firm, but the center will still have a slight jiggle.
  13. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  14. Remove from oven and water bath, and cool completely on a wire rack.
  15. Run a thin knife around the edge of the pan to loosen the cheesecake.
  16. Drizzle with 4 tablespoons caramel topping.
  17. Refrigerate for at least 4 hours, or preferably overnight.
  18. Remove the sides of the pan before serving.
  19. Garnish with whipped cream, a drizzle of remaining caramel, and chopped pecans.
