How to Make Cheddar Cheese Quesadilla Torte
- Crumble the sausage into a medium skillet. Add the chopped onion and minced garlic.
- Cook over medium heat, stirring occasionally, until the sausage is no longer pink (about 8-10 minutes).
- Set aside 3 thin rings from the bottom of the red pepper for garnish. Chop the remaining red pepper and stir it into the sausage mixture.
- Add the salsa, corn, and cilantro to the sausage mixture. Set aside.
- Squeeze out excess moisture from the spinach. Toss it with the Parmesan cheese, black pepper, and mozzarella cheese.
- Lightly grease a large pizza pan or baking sheet.
- Place one tortilla on the prepared pan. Spread 2/3 cup of the sausage mixture evenly over the tortilla. Top with 1/3 cup of the cheddar cheese.
- Cover with another tortilla. Spread 1 cup of the spinach mixture evenly over the tortilla.
- Repeat layers, ending with a tortilla. (Tortilla, Sausage mixture, Cheddar, Tortilla, Spinach mixture, repeat as needed to use all ingredients, ending with a tortilla).
- Gently press down on the layered tortillas.
- Loosely cover the torte with foil.
- Bake in a preheated 375°F (190°C) oven for 40 minutes.
- Remove the foil, sprinkle the remaining 1/3 cup cheddar cheese and reserved red pepper rings over the top.
- Continue baking for 10-15 minutes, or until the cheese is melted and bubbly and the torte is heated through.
- Let the torte stand for 10 minutes before cutting into wedges.
- Serve warm with additional salsa, sour cream, or guacamole, if desired.
