How to Make Citrus Beef Stir Fry

  1. Zest one orange using a microplane or fine grater, reserving 1 tablespoon of zest.
  2. Juice both oranges (about 1/2 cup juice). In a medium bowl, whisk together orange juice, 1 tablespoon orange zest, 2 tablespoons sherry, 2 tablespoons soy sauce, and 1 tablespoon grated fresh ginger.
  3. Slice 1 pound beef sirloin thinly (1/8 inch thick) across the grain. Add beef to the marinade.
  4. Marinate beef for at least 5 minutes, or cover and refrigerate for up to 24 hours for maximum flavor.
  5. Remove beef from marinade; set aside. Whisk 1 tablespoon cornstarch into the remaining marinade.
  6. Heat a wok or large skillet over high heat. Add 2 teaspoons of oil.
  7. Stir-fry beef in batches until lightly browned. Remove from wok and set aside.
  8. Add 1 tablespoon of oil to the wok. Add 2 cups chopped celery, 1 cup bean sprouts, and 1 cup snow peas. Stir-fry for 1 minute, until bright green.
  9. Pour the cornstarch-marinade mixture into the wok. Bring to a boil, stirring constantly.
  10. Add the cooked beef back to the wok. Toss to combine and coat evenly. Remove from heat immediately.
  11. Serve immediately over rice and garnish with sesame seeds (optional).
